This cake is deliciously moist with organic coconut flour and organic coconut sugar (low GI), blanched almond meal, tapioca flour, baking soda, cream of tartar and unrefined Celtic sea salt.
Bake a delicious paleo-friendly moist almond cake. This mix contains nutritious blanched almond meal from Australian almonds and high-fibre protein-rich organic coconut flour. Organic coconut sugar has a low glycaemic index and is nutritious at the same time. The mix also boasts unrefined Celtic sea salt which contains 84 trace minerals. Instead of commercial baking powder, baking soda and cream of tartar is used as an aluminium free raising agent. You also won’t find any corn, soy or any numbers in this mix!
You only need to add the following: 5 eggs, 170g organic coconut oil (or butter if not dairy free), ½ cup water or milk of your choice.
Gluten and Dairy free when prepared with coconut oil and a non-dairy milk (if not using water).
Makes: ONE round cake 22cm or TWO loaf pans (20x9cm)
Cooking time: 30-40 minutes in pre-heated oven.
